Cheers to My Health
I haven't been eating all that healthy lately. Between being crazy busy and a raucous and constant craving for pasta it's not been my best month. Last night I realized that I'd eaten pasta for dinner 4 nights in row. Not even the whole grain kind. It's possible there was Mac n Cheese of the blue box variety involved...
BUT, there's a farmers market just a few blocks down my street and I got my act together this morning and walked miss Sophie down there to see what we could see.
We found plenty thankyouverymuch. And then I made a delicious smoothie with beets and fresh berries based on this but more like this instead:
1 medium beet, (or three small if that's what you bought at the farmers market) roasted
1 cup of mixed berries (blueberries and blackberries for me)1/2 apple, peeled and roasted also
3/4 cup coconut milk
1/4 cup of orange juice
1 tsp honey
a handful of ice
Blend well. Enjoy!
Ps. About the beets, here is a quick overview of the roasting of them.
