Vegetarian Shepard's Pie for Hungry Bikers


Vegetarian Shepard's Pie for two very hungry bikers, who by the way did close to 140 miles that day.

I'm so proud of them. And impressed. I can't even fathom that.

Chop into equal(ish) pieces and sauté in 1 tbs of butter:
1 large turnip
2 large carrots
2 cups corn
1/2 large onion
2 cups brocoli

Stir in 1Tbs Sage, and sprinkle of salt, pepper and fennel with 2/3 cup milk and 1/2 cup flour. Mix well.

Cook until tender.

Meanwhile make about 4 cups mashed potatoes (from scratch or instant or whatever....I won't judge!)

In a 9x11 pan spread vegetable layer first and then cover with mashed potatoes. Sprinkle cheese of your choosing across top (I used asiago). Bake in a pre-heated 350 degree oven for 20 min and then under the broiler for 10 minutes.

Even my "meat and potatoes" husband loved it.

The guys left around 9 this morning headed to the next stop. It was so great to get a little time with them on their tightly managed schedule, but I'm always sad to see my notsolittle brother go.
